Dom Ruinart Blanc de Blancs 2007 is made from Grands Crus of Chardonnays from 75% of the Côte des Blancs (Cramant, Avize, Chouilly, Le Mesnil-sur-Oger) and 25% of the Montagne de Reims (Sillery). Reflecting a rich palette of Champagne terroirs, this emblematic grape variety is present in all the cuvées of the House.

Dom Ruinart Blanc de Blancs 2007 unveils a bright robe of intense gold, embellished with shimmering green reflections. The first nose evokes chalky notes of flint and oyster shell that mingle with smoked aromas of blond tobacco. The second nose reveals slight notes of sap, lime, and acacia as well as aromas of fresh citrus such as lime, and yuzu or green fruits such as plum. Subtle notes of fig leaf, liquorice and great Chinese tea mingle with the complexity of the aromatic bouquet. The smooth attack quickly gives way to a vibrant tension of deep intensity marked by notes of green citrus and grapefruit. The sapid and chalky finish is supported by an elegant bitterness.
