Domaine du Saut de l’Aigue

Nowadays, the Domaine Saint Jean du Noviciat (Mas du Novi) is a property of 100 ha, including 50ha of vines grouped around the building. The vineyard, located in the heart of the Languedoc, is located on hillside land. Since 1994, this estate has been winemaking, raising and bottling its own wine production, where you can find many varieties for noble red wines: Syrah, Mourvèdre, Grenache and Cinsault.

By its Mediterranean component under maritime influence, the climate is a major factor in the identity of this wine. This 2005 vintage features a deep ruby color that reveals its Mediterranean identity, a complex nose expressing red, black fruits, scrubland, spices and often tapenade, a full and generous mouth, finesse and silky tannins. It reveals their gourmet character from the end of the breeding while having a strong aging potential.
