Originally from Sérignan, Séraphin Sabon founded the estate in 1932, after marrying Marie Jausset daughter of an owner in Châteauneuf-du-Pape. Subsequently, it is his eldest son, Joseph, who takes over the reins. Today, the third generation is at work: Céline, David and Thierry, Joseph’s grandchildren, run the family estate. Together, they cultivate nearly 50 hectares of vines spread over the appellations Châteauneuf-du-Pape, Lirac, Côtes-du-Rhône, as well as in PGI Pays du Gard.

 

This 2021 vintage reveals a pale yellow color with bright green hues. The nose is fine and complex with fruity aromas (peaches), white flowers (acacia, honeysuckle) and some exotic notes. The attack on the palate is delicate and smooth. The aromatic palette is expressed through floral and fruity notes. The whole is balanced by a nice minerality and a remarkably fresh final note.
